  • ¼ cup vegetable oil
Spices & seasonings (4): salt, ground turmeric, ground coriander, chile powder
  • 2 tsp salt
  • 1 tsp ground turmeric
  • 2 tsp ground coriander
  • 2 tsp chile powder

How to make it

Steps in our own plain words.

  1. If you are using fish it will usually be frozen.

  2. Soak it.

  3. Do it in cold water for 30-45 min to defrost plus while still a little firm, descale.

  4. Cut every steak in quarters and wash in cold saltwater some times.

  5. Drain.

  6. Set aside.

  7. If using alternative such as cod, cut in 2 ½ inch chunks then rinse, drain.

  8. Set aside.

  9. Top plus tail your daikon and peel using a potato peeler.

  10. Cut in half widthways then cut every half down the middle, lengthways.

  11. Slice into ¾ inch-thick half-moon pieces.

  12. Rinse.

  13. Set aside.

  14. Place a large, shallow pot over a medium heat.

  15. Add the oil.

  16. When your oil is hot add the crushed garlic.

  17. Stir for a minute until pale golden.

  18. Add the onion paste and salt.

  19. Heat for 3-5 min, until the onion softens and becomes translucent.

  20. Stir every so often.

  21. Pour in ¾ cup + 1 tbsp of water then cover.

  22. Cook for 10 minutes.

  23. Stir when or twice.

  24. After 10 minutes add the ground spices.

  25. Stir for 2 minutes so that the spices cook through.

  26. Cover.

  27. Heat for 5 min over a low heat then mix in the daikon.

  28. After a min or so add ¾ cup + 1 tbsp of water.

  29. Cover.

  30. Heat for 10 minutes on a medium heat.

  31. Add the fish pieces to the pan.

  32. Mix well so that your fish is coated in the spices.

  33. Shake the pan and cover.

  34. Cook for 5 minutes on medium heat.

  35. It's very important not to mix the pot after this stage.

  36. While that cooks, boil some water.

  37. After the 5 minutes are over pour 2 cups hot water into the pan.

  38. When doing this pour in your sides of your pan so that you ’t pour boiling water directly on the fish.

  39. Give your pan a gentle shake then cover.

  40. Simmer over high heat for 15 minutes.

  41. Add your chopped coriander plus chillies and continue cooking for another 5 min then turn off the heat.

  42. Serve right away with rice and the lime wedges.

On the side: Naan

A side we added to round out the meal. It is not part of the original recipe.

How to make it (5 min)
  1. Warm the naan in a hot pan or the oven for 1 to 2 minutes.
