How to make it

Steps in our own plain words.

  1. Wash the stewing steak.

  2. Place it in your mixing bowl using the lemon or lime juice.

  3. Set that to one side.

  4. While you slice the garlic in tiny slices.

  5. Slice the onion.

  6. Chop the basil and thyme.

  7. Be very careful when you slice your scotch bonnet peppers.

  8. You want these in fine bits, which you can either do using a long knife trying not to touch your pepper, or you can rubber gloves to cut it up.

  9. Wash your hands straight afterward and don't touch your eyes.

  10. These peppers burn your hands plus eyes if they make contact using the skin.

  11. Rinse your lime or lemon juice off your stewing steak.

  12. And cut the meat into cubes, also.

  13. Chop your pig’s trotters and the oxtail in cubes.

  14. Fill the large pot with water.

  15. Bring to a boil.

  16. Add the pig’s trotters.

  17. Wait until the pig’s trotters have boiled.

  18. Drain your excess water, plus now add the stewing steak.

  19. Cover with fresh hot water.

  20. Add your chopped garlic, onion, and peppers.

  21. Add the cinnamon stick plus a, cloves, basil and thyme pinch of salt and sugar to taste.

  22. Simmer until the meat is tender.

  23. Your flavor of this dish comes out over few days and therefore gets tastier every time you reheat it.

  24. Make sure you always reheat your entire pot to boiling point.
