How to make it

Steps in our own plain words.

  1. Turn the oven on to 300°F.

  2. Toss your beef plus flour together in a bowl using some salt and black pepper.

  3. Heat a large casserole until hot.

  4. Add half of your rapeseed oil plus enough of the beef to cover the bottom of the casserole.

  5. Fry until browned on each side.

  6. Remove.

  7. Set aside.

  8. Repeat with the remaining oil and beef.

  9. Return the beef to the pan.

  10. Add the wine.

  11. Heat till your volume of liquid has reduced by half.

  12. Add the mustard, thyme, carrots, onion and stock.

  13. Season well with salt and pepper.

  14. Cover with a lid.

  15. Place in the oven for two hours.

  16. Take it out of the oven, check the seasoning.

  17. Set aside to cool.

  18. Remove the thyme.

  19. Wait until your beef is cool plus you're ready to assemble the pie.

  20. Turn the oven on to 400°F.

  21. Move your beef to a pie dish, brush your rim using your beaten egg yolks plus lay the pastry over the top.

  22. Brush the top of your pastry with more beaten egg.

  23. Trim the pastry so there is enough excess to crimp the edges.

  24. Place in the oven.

  25. Bake for 30 minutes, till your pastry is golden-brown and cooked through.

  26. For the green beans.

  27. Bring a pot of salted water to the boil.

  28. Add the beans.

  29. Cook for 4-5 minutes, until tender.

  30. Drain.

  31. Toss with the butter.

  32. Season with black pepper, to serve.

  33. Place a big spoonful of pie on each plate with some green beans alongside.
