How to make it

Steps in our own plain words.

  1. Turn the oven on to 225°F.

  2. Take your meat out of your fridge to de-chill.

  3. Pulse your onions and garlic in a food processor till finely chopped.

  4. Heat 1 ½ tbsp olive oil in a big casserole.

  5. Sear the meat on every side until golden.

  6. Set to one side.

  7. Add another little slug of oil to brown the chorizo.

  8. Remove.

  9. Add the onion and chillies, herbs, spices and garlic then heat until soft in the chorizo oil.

  10. Season with salt and pepper.

  12. Put all the meat back in the pot with 1 ⅔ cups + 1 tsp water.

  13. Bring up to a simmer.

  14. Cook, covered, in the low oven.

  15. After 2 hours, check the meat.

  16. Add the beans.

  17. Cook for a further hour and before serving, pull your meat apart with a pair of forks.

On the side: Rice and beans

A side we added to round out the meal. It is not part of the original recipe.

  1. Rinse the rice. Simmer it covered in 2 cups of water for about 18 minutes.
  2. Warm the refried beans in a small pot, stirring, until hot.
