Main ingredient

  • 2 bacon

Fresh & other

  • 1 bunch kale
  • 2 cloves garlic
  • 1 onion
  • 1 sprig thyme Shopping tip: Fresh sprigs or dried both work (1 tsp dried = 1 tbsp fresh).
  • 1 tomato
  • 1 red bell pepper Shopping tip: Bell pepper (UK recipes call it pepper).
  • 3 bananas

Sauces & oils

  • Splash vegetable oil
Spices & seasonings (1): paprika
  • ½ tsp paprika

How to make it

Steps in our own plain words.

  1. Cut leaves and tender stems from your kale branches, them soak in bowl of cold water for around 5-10 minutes until finish with prep.

  2. Proceed to dicing the tomatoes, mincing the garlic and slicing the onions.

  3. Set aside.

  4. Remove kale from water cut in chunks.

  5. Place bacon on pot.

  6. Cook until crispy.

  7. Add onions, garlic, thyme.

  8. Stir for about a minute or more.

  9. Add tomatoes.

  10. Scotch bonnet pepper, smoked paprika.

  11. Cook for about 2-3 more minutes.

  12. Add vegetable, salt.

  13. Mix well, and steamed for around 6-8 minutes until leaves are tender.

  14. Add a tiny bit of water if needed, adjust seasonings.

  15. Turn off the heat.

  16. Using sharp knife cut both ends off your plantain.

  17. This will make it easy to grab your skin of the plantains.

  18. Slit a shallow line down your long seam of the plantain.

  19. Peel only as deep as the peel.

  20. Remove plantain peel by pulling it back.

  21. Slice the plantain in medium size lengthwise slices.

  22. Set aside.

  23. Coat a big frying pan with cooking oil spray.

  24. Spray your tops of your plantains using a generous layer of oil spray.

  25. Sprinkle with salt, freshly ground pepper.

  26. Let your plantains "fry" on medium heat, shaking your frying pan to redistribute them every few min.

  27. As the plantains brown, continue to add pepper, salt and more cooking oil spray until they have reached the wanted color and texture.

  28. Remove.

  29. Serve with kale.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
