How to make it

Steps in our own plain words.

  1. Turn the oven on to 350°F.

  2. Have the chicken joints ready to cook.

  3. Heat your butter plus 2 ½ tbsp olive oil in flameproof casserole or large frying pan.

  4. Brown the chicken bits in batches on both sides, seasoning them using salt and pepper as you go.

  5. Don't crowd your pan - fry the chicken in little batches, removing the bits to kitchen paper as they are done.

  6. Add a little more olive oil to your casserole.

  7. Fry your onions over a medium heat for 10 min, until softened but not browned.

  8. Stir often.

  9. Add the rest of the oil, the peppers.

  10. Cook for another 5 minutes.

  11. Add the garlic, sun-dried tomatoes and chorizo.

  12. Cook for 2-3 minutes.

  13. Add the rice, stirring to ensure it's well coated in the oil.

  14. Stir in chopped thyme, bay leaves, paprika and the tomato paste.

  15. Pour in the stock and wine.

  16. Wait until the liquid starts to bubble.

  17. Turn heat down to a gentle simmer.

  18. Press the rice down in your liquid if it isn't already submerged.

  19. Place the chicken on top.

  20. Add your lemon wedges and olives around the chicken.

  21. Cover.

  22. Cook in the oven for 50 minutes.

  23. Your rice should be cooked but still have bite, plus your chicken should have juices run clear when pierced in your thickest part with a knife.

  24. If not, heat for another 5 minutes and check again.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
