How to make it

Steps in our own plain words.

  1. 1, clean.

  2. Cut the chicken.

  3. Marinate briefly with a little oil, turmeric and salt, 2.

  4. Rinse and soak basmati rice 20–30 min, 3.

  5. Heat ghee/oil in a large pot.

  6. Fry chopped onion until golden.

  7. Add minced garlic and green chillies.

  8. Fry 1–2 min, 4.

  9. Add whole spices and ground spices.

  10. Stir until it smells good, 5.

  11. Add chicken pieces.

  12. Brown lightly.

  13. Add enough water/chicken stock to cover.

  14. Simmer until chicken is nearly cooked, 6.

  15. Remove chicken.

  16. Measure remaining liquid.

  17. Add soaked rice.

  18. Bring to a boil.

  21. Return your chicken to the rice pot on top.

  22. Cover tightly plus steam.

  23. Do it on low.

  24. Keep going for 10–15 min so flavors meld.

  25. For authentic smoky aroma: heat a little charcoal until red hot.

  26. Place it on a little foil cup in your centre of the pot.

  27. Add a tsp of butter/oil on your coal then cover right away to trap smoke for 5–10 minutes.

  28. Remove coal, 9.

  29. Top with fried onions, chopped coriander.

  30. Serve with chutney or raita.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.
