  • 1 avocado
  • Juice of 1 lime
  • Chopped lime
  • 3 ½ oz sour cream

  • to serve cilantro

Sauces & oils

  • 1 tbsp olive oil
  • 2 tsp red wine vinegar
Spices & seasonings (2): paprika, harissa spice
  • pinch paprika
  • 2 tsp harissa spice

How to make it

Steps in our own plain words.

  1. Turn the oven on to 400°F (350°F for a fan oven) plus line a baking tray with foil.

  2. Drain the tip, pat dry and chickpeas onto the prepared baking tray.

  3. Add the oil and paprika.

  4. Toss to coat.

  5. Roast for 20-25 mins till browned and crisp, shaking halfway through cooking.

  6. While that cooks, put the tomatoes and onion in a little bowl with the vinegar.

  7. Set aside to pickle.

  8. Put the avocado in another bowl.

  9. Mash using a fork, leaving some larger chunks.

  10. Stir in the lime juice.

  11. Season well.

  12. Mix the soured cream with the harissa.

  13. Set aside until ready to serve.

  14. Heat a griddle pan until nearly smoking.

  15. Add the tortillas, one each time, charring every side until hot with griddle lines.

  16. Put everything on your table plus build your fajitas: spread a little of your harissa cream over the tortilla.

  17. Top with coriander, pickled salsa, guacamole and roasted chickpeas, if you like.

  18. Dish up with the lime wedges for squeezing over.

On the side: Rice and beans

A side we added to round out the meal. It is not part of the original recipe.

How to make it (25 min)
  1. Rinse the rice. Simmer it covered in 2 cups of water for about 18 minutes.
  2. Warm the refried beans in a small pot, stirring, until hot.
