Spices & seasonings (5): dried leaves of summer savoury, salt, pepper, ground nutmeg, bay leaf
  • ½ tsp dried leaves of summer savoury
  • To taste salt
  • To taste pepper
  • ¼ tsp ground nutmeg
  • 1 bay leaf

How to make it

Steps in our own plain words.

  1. Heat oil on medium-high heat in large cook pan or pan.

  2. Cook the onion and garlic till softened, about 5 minutes.

  3. Add the ground beef, pork, and spices.

  4. Cook until the meat is browned.

  5. Add the beef broth.

  6. Bring it up to a simmer then turn the heat down to medium low.

  7. Add the grated potato.

  8. Stir it in.

  9. Heat till liquid is almost absorbed, about 15 min.

  10. Remove the bay leaves.

  11. Add salt to taste.

  12. Remove the pan from the heat.

  13. Let the mix cool fully — it bakes best if your filling is chilled.

  14. Turn the oven on to 375°F.

  15. Roll out one disc of your pie dough to less than your 1 4-inch thickness plus line the 9-inch pie plate on a lightly floured surface.

  16. Fill this with the cooled tourtière mixture.

  17. Spread out.

  18. Roll out the rest of the dough to the same thickness.

  19. Cut a hole in the centre.

  20. Place on top of the filling.

  21. Trim your dough to 1 2-inch beyond your edge of your pie plate plus pinch the edges of the crust together.

  22. Brush the crust with the egg wash.

  23. Bake tourtière for about 45 minutes until the pastry is a rich golden.

  24. Let cool for 15 min before slicing to serve.

  25. Serves: 8-10 (makes 9-inch pies).

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
