  • 2 ½ tbsp butter
  • 13 egg yolks
  • 4 oz superfine sugar Shopping tip: Superfine sugar (UK: caster). Regular sugar works.
  • 1 ½ cups + 1 tbsp coconut milk
  • 2 ¼ oz desiccated coconut Shopping tip: Unsweetened shredded coconut (UK: desiccated).
Spices & seasonings (1): vanilla extract
  • 1 ¼ tsp vanilla extract

How to make it

Steps in our own plain words.

  1. Turn the oven on to 350°F (325°F for a fan oven).

  2. Rub 4 ramekins, around ⅔ cup + 1 tbsp capacity, or dariole moulds liberally using the soft butter.

  3. Sprinkle with the caster sugar to coat.

  4. Press your egg yolks through a wire sieve in a medium bowl.

  5. Mix with vanilla, coconut, sugar and the coconut milk.

  6. Pour into ramekins.

  7. Place in a big roasting tin in the oven.

  8. Pour water in your roasting tin to three-quarters up your ramekins so it acts like bain marie or water bath for your quindim.

  9. Cook in the oven for 30-35 mins till the tops are golden.

  10. Take the ramekins out of the water.

  11. Leave to cool for 5 mins.

  12. Chill for 4 hrs.

  13. Run a knife around the edge.

  14. Place a plate on top.

  15. Turn out the quindims to serve.
