How to make it

Steps in our own plain words.

  1. Pick through lentils.

  2. Keep going for any foreign debris, them 2 or 3 times.

  3. Drain.

  4. Set aside.

  5. Fair warning, this will turn your lentils in solid block that you’ll have.

  6. Do it to break up later.

  7. Cook your olive oil plus your onion with a pinch of salt for around 3 minutes in a big pot over medium-high heat.

  8. Add the carrots.

  9. Cook for another 3 minutes.

  10. Add the tomato paste.

  11. Stir it around for around 1 minute.

  12. Add the red pepper as quickly, black pepper, thyme, mint, paprika and cumin as you can.

  13. Mix for 10 seconds to bloom the spices.

  14. Right away add the lentils, water, broth, and salt.

  15. Bring the soup to a boil.

  16. After it has come to a boil, turn the heat down to medium-low.

  17. Cover the pot halfway.

  18. Cook for 15-20 minutes till your lentils have fallen apart plus the carrots are completely cooked.

  19. After your soup has cooked plus your lentils are tender, blend your soup either in a blender or use a hand blender to reach your consistency you desire.

  20. Taste for seasoning.

  21. Add more salt if necessary.

  22. Dish up using crushed-up crackers, torn bread, or something else to add extra thickness.

  23. Makes great leftovers, stays good in your fridge for about a week.
