How to make it
Steps in our own plain words.
-
Pick through lentils.
-
Keep going for any foreign debris, them 2 or 3 times.
-
Drain.
-
Set aside.
-
Fair warning, this will turn your lentils in solid block that you’ll have.
-
Do it to break up later.
-
Cook your olive oil plus your onion with a pinch of salt for around 3 minutes in a big pot over medium-high heat.
-
Add the carrots.
-
Cook for another 3 minutes.
-
Add the tomato paste.
-
Stir it around for around 1 minute.
-
Add the red pepper as quickly, black pepper, thyme, mint, paprika and cumin as you can.
-
Mix for 10 seconds to bloom the spices.
-
Right away add the lentils, water, broth, and salt.
-
Bring the soup to a boil.
-
After it has come to a boil, turn the heat down to medium-low.
-
Cover the pot halfway.
-
Cook for 15-20 minutes till your lentils have fallen apart plus the carrots are completely cooked.
-
After your soup has cooked plus your lentils are tender, blend your soup either in a blender or use a hand blender to reach your consistency you desire.
-
Taste for seasoning.
-
Add more salt if necessary.
-
Dish up using crushed-up crackers, torn bread, or something else to add extra thickness.
-
Makes great leftovers, stays good in your fridge for about a week.
