  • 3 ¼ cups pitted dates
  • 1 ¼ cups water
  • 2 ½ cups oats
  • 1 ¼ cups all purpose flour
  • 1 ¼ cups brown sugar
  • ¾ tsp baking powder
  • 1 ¼ cups unsalted butter
Spices & seasonings (2): vanilla, salt
  • 2 cups vanilla
  • ¼ tsp salt

How to make it

Steps in our own plain words.

  1. Turn the oven on to 350°F.

  2. Grease 8-inch (8 inches) square baking pan.

  3. To make the date filing: mix the dates and water in a medium pot over high heat.

  4. Bring to a boil.

  5. Turn the heat down to low.

  6. Simmer, stirring every so often till the mix thickens, around 6 to 8 minutes.

  7. Take it off the heat.

  8. Stir in vanilla.

  9. Let cool.

  10. Set aside.

  11. Mix salt, baking soda, sugar, flour and rolled oats in a food processor.

  12. Pulse 3 times.

  13. Add butter and pulse again till the mix is crumbly in pea-sized clumps.

  14. Move to a mixing bowl to well mix in the butter.

  15. Spread half of the oat mix on the bottom of your prepared baking pan, pressing down to make flat, equal bottom later.

  16. Add the date mixture over the crust.

  17. Spread.

  18. Layer with the rest of the oat mix plus press down to flatten the top layer.

  19. Cook in the oven in the centre of the oven till the top is golden, 30 to 35 minutes.

  20. Let cool fully in the pan before cutting and serving.

  21. Date Squares keep fully, covered in your refrigerator for up to a week, plus frozen for 2 to 3 months.
