Main ingredient
- 11 oz fettuccine
Fresh & other
- 10 oz clotted cream
- 1 oz butter
- 1 ¼ tsp corn flour Shopping tip: Cornstarch (UK: cornflour).
- 4 oz parmesan cheese
- Chopped parsley Shopping tip: Fresh flat-leaf (Italian) parsley. Curly works too.
Spices & seasonings (1): nutmeg
- Grated nutmeg
How to make it
Steps in our own plain words.
-
Stir the cornflour, butter and clotted cream over a low-ish heat in a medium pot.
-
Bring to a low simmer.
-
Turn off the heat.
-
Keep warm.
-
While that cooks, put the cheese and nutmeg in a little bowl.
-
Add a good grinding of black pepper.
-
Stir everything together.
-
Put your pasta in another pan using 2 tsp salt.
-
Pour over some boiling water.
-
Heat following pack instructions (usually 3-4 mins).
-
Wait until cooked.
-
Scoop some of the cooking water in a heatproof jug or mug.
-
Drain the pasta, but not too well.
-
Add your pasta to your pan with the clotted cream mixture.
-
Sprinkle over the cheese and fold everything together over low heat using a rubber spatula.
-
Wait until mixed.
-
Splash in 3 tbsp of your cooking water.
-
At first, your pasta will look wet plus sloppy: keep stirring till your water is absorbed plus the sauce is glossy.
-
Check your seasoning before transferring to heated bowls.
-
Sprinkle over some chives or parsley.
-
Serve right away.
On the side: Garlic bread
A side we added to round out the meal. It is not part of the original recipe.
How to make it (15 min)
- Heat the oven to 400°F. Mash the soft butter with the minced garlic.
- Split the bread, spread on the garlic butter and bake 8 to 10 minutes until golden. Slice.
