How to make it

Steps in our own plain words.

  1. Melt your butter with the oil in a big heavy-based pan.

  2. Add the onions.

  3. Fry using the lid on for 10 mins till soft.

  4. Sprinkle in the sugar.

  5. Cook for 20 mins more, until caramelised.

  6. Stir often.

  7. The soft, full of flavour and onions should be golden when pinched between your fingers.

  8. Take care towards end.

  9. Do it to ensure that they don’t burn.

  10. Add your garlic for your final few mins of your onions’ cooking time.

  11. Sprinkle in the flour.

  12. Stir well.

  13. Increase the heat.

  14. Keep stirring as you gradually add your wine, followed by the hot stock.

  15. Cover.

  16. Simmer for 15-20 mins, to serve.

  17. Turn on your grill, and toast the bread.

  18. Ladle the soup into heatproof bowls.

  19. Put slice or two of toast over the top of your bowls of soup, plus pile on the cheese.

  20. Grill until melted.

  21. Alternatively, you can complete your toasts under the grill.
