  • 3 cups water
  • 10 oz coconut milk
  • ¾ cup fine yellow cornmeal
  • ⅓ cup sweetened condensed milk
Spices & seasonings (4): vanilla extract, ground cinnamon, ground nutmeg, ground allspice
  • 1 ¼ tsp vanilla extract
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground allspice

How to make it

Steps in our own plain words.

  1. Add 2 cups water, can coconut milk to 4 QT heavy bottomed pot.

  2. Heat until it bubbles over medium-high heat.

  3. While that cooks, add ¾ cup cornmeal plus 1 ¼ cups water to a big mixing cup.

  4. Whisk until smooth.

  5. Wait until the pot begins to boil.

  6. Whisk in cornmeal mix and continue to whisk for around 1 minute, ensuring there are no lumps.

  7. Turn the heat down to low.

  8. Cover with a tight fitting lid.

  9. Cook on low heat for 15-20 minutes.

  10. Stir every so often.

  11. Wait until there is about 5 minutes left.

  12. Stir in all-spice, nutmeg, cinnamon and vanilla extract.

  13. Take it off the heat and sweeten with condensed milk.

  14. Serve.
