Main ingredient

  • 3 pork

Fresh & other

  • 3 onions
  • 1 ½ cups + 1 tbsp vegetable stock Shopping tip: Vegetable broth (carton or can), or a bouillon cube in hot water.
  • 2 ½ tsp mirin
  • 2 ½ tsp sugar
  • 5 eggs
  • 1.1 lb sushi rice
  • Chopped chive Shopping tip: Fresh chives. Green onion tops work too.

Sauces & oils

  • 2 ½ tbsp vegetable oil
  • 2 ½ tbsp soy sauce

How to make it

Steps in our own plain words.

  1. Heat the oil in a pan.

  2. Fry the sliced onion until golden.

  3. Add the tonkatsu, placing it in your middle of the pan.

  4. Mix the sugar together, mirin, soy and dashi and tip three-quarters of the mix around the tonkatsu.

  5. Sizzle for 2 mins so your sauce thickens a little plus the tonkatsu reheats.

  6. Tip the beaten eggs around the tonkatsu.

  7. Heat for 2-3 mins till your egg is cooked through but still little runny.

  8. Split it between two bowls.

  9. Top every with half the egg and tonkatsu mix.

  10. Sprinkle over the chives.

  11. Serve right away, drizzling using little more soy if you want extra umami kick.

On the side: Cucumber salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Thinly slice the cucumbers.
  2. Toss with the rice vinegar and a pinch of salt. Let it sit a few minutes.
