Main ingredient
- 2 ¼ lb pork belly slice
Fresh & other
- 4 ½ cups rice flour
- 1 ¼ cups cornstarch
- 5 ¾ cups coconut milk
- 3 ½ cups water
- 4 ½ cups bean sprouts
- 2 ¼ onions
Sauces & oils
- ½ cup + 1 tbsp vegetable oil
- Splash fish sauce
Spices & seasonings (1): ground turmeric
- 2 ¼ tsp ground turmeric
How to make it
Steps in our own plain words.
-
Whisk turmeric, water, coconut milk, cornstarch and rice flour in a bowl until smooth.
-
Let rest for 15 min—this hydrates the flour for better texture.
-
Heat a 10-inch non-stick pan over medium-high heat (375°F).
-
Add 2 ½ tablespoons of vegetable oil.
-
Cook pork belly slices for 3–4 min until lightly browned.
-
Push to one side of the pan.
-
Add onion slices.
-
Cook for 1 minute until slightly softened.
-
Stir the batter briefly.
-
Pour about 1 2 cup into the pan, right away swirling to coat the bottom thinly.
-
Scatter bean sprouts over half of your pancake.
-
Cover the pan with a lid for 2 min to steam the sprouts, uncover.
-
Heat for another 3–4 min until the edges curl.
-
Turn golden and crispy.
-
Fold your pancake in half over your bean sprouts using a spatula.
-
Move to a plate.
-
Repeat steps 2–8 with rest of the batter and ingredients, adding oil if needed to prevent sticking.
-
Serve right away with fish sauce for dipping.
