Main ingredient

  • 2 ¾ lb pork belly slice

Fresh & other

  • 5 ½ cups rice flour
  • 1 ⅓ cups cornstarch
  • 7 cups coconut milk
  • 4 ¼ cups water
  • 5 ½ cups bean sprouts
  • 2 ¾ onions

Sauces & oils

  • ⅔ cup + 1 tsp vegetable oil
  • Splash fish sauce
Spices & seasonings (1): ground turmeric
  • 2 ¾ tsp ground turmeric

How to make it

Steps in our own plain words.

  1. Whisk turmeric, water, coconut milk, cornstarch and rice flour in a bowl until smooth.

  2. Let rest for 15 min—this hydrates the flour for better texture.

  3. Heat a 10-inch non-stick pan over medium-high heat (375°F).

  4. Add 3 tablespoons of vegetable oil.

  5. Cook pork belly slices for 3–4 min until lightly browned.

  6. Push to one side of the pan.

  7. Add onion slices.

  8. Cook for 1 minute until slightly softened.

  9. Stir the batter briefly.

  10. Pour about 1 2 cup into the pan, right away swirling to coat the bottom thinly.

  11. Scatter bean sprouts over half of your pancake.

  12. Cover the pan with a lid for 2 min to steam the sprouts, uncover.

  13. Heat for another 3–4 min until the edges curl.

  14. Turn golden and crispy.

  15. Fold your pancake in half over your bean sprouts using a spatula.

  16. Move to a plate.

  17. Repeat steps 2–8 with rest of the batter and ingredients, adding oil if needed to prevent sticking.

  18. Serve right away with fish sauce for dipping.
