How to make it

Steps in our own plain words.

  1. Cook the lentils.

  2. Bring lentils plus 4 cups of water to boil in a medium pot or pot over high heat.

  3. Turn the heat down to low.

  4. Cook until lentils are tender (15-17 minutes).

  5. Drain from water.

  6. Season with a little salt.

  7. For the rice.

  8. Drain the rice from its soaking water.

  9. Mix your par-cooked lentils plus the rice in the pot over medium-high heat with coriander, pepper, salt and 1 ½ tbsp cooking oil.

  10. Cook for 3 minutes.

  11. Stir regularly.

  12. Add warm water to cover your rice and lentil mix by around 1 1 2 inches (you’ll use about 3 cups of water here).

  13. Bring to a boil.

  14. The water should reduce a bit.

  15. Cover.

  16. Heat till all your liquid has been absorbed plus both the rice and lentils are fully cooked through (about 20 minutes).

  17. Keep covered and undisturbed for 5 min or so.

  18. Make the pasta.

  19. While your rice plus lentils are cooking, make your pasta according to package instructions by adding your elbow pasta to boiling water using a dash of salt plus a little oil.

  20. Cook until the pasta is al dente.

  21. Drain.

  22. Cover your chickpeas plus warm in the microwave briefly before serving.

  23. Make the crispy onion topping.

  24. Sprinkle the onion rings with salt.

  25. Toss them in the flour to coat.

  26. Shake off excess flour.

  27. Heat your cooking oil over medium-high heat in a large pan.

  28. Cook the onion rings, until they turn a nice caramelized brown.

  29. Stir often.

  30. Onions must be crispy, not burned (15-20 minutes).

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
