How to make it

Steps in our own plain words.

  1. To prepare your dough, sift your flour with 1tsp of salt in a mixing bowl.

  2. Slowly mix in as much of your water is required, till a stiff dough is formed.

  3. Knead on clean work surface for 5-10 min, until the dough is elastic and shiny.

  4. Cover with a damp cloth.

  5. Set aside for about an hour, 2.

  6. Put the spices, ground pepper, 1 tsp salt, chilli, onions and chopped lamb in a bowl.

  7. Mix well, 3.

  8. Divide the dough into 4 small balls.

  9. Roll out to thickness of 1.5mm, cutting in 4 inches squares.

  10. Place 4 heaped teaspoon of the lamb mix into each square, 4.

  11. Take two opposite corners.

  12. Bring them to join in your centre by nipping together between your fingers.

  13. Bring together to other two corners in your same manner.

  14. Note that your mantu should not be entirely closed, as your steam has to be penetrate.

  15. Cook the filling, 5.

  16. Place mantu so that there is a little space between each one using fat to grease your shelves of the steamer.

  17. Steam for 30-45 min over a medium heat, 6.

  18. While that cooks, make the tomato sauce.

  19. Heat the oil in a pan.

  20. Add tomato puree.

  21. Bring to the boil.

  22. Stir.

  23. Simmer on a low heat till the mantu are ready, 7.

  24. Remove the mantu from the steamer.

  25. Place on a large, warm dish.

  26. Spoon your tomato sauce over the top, followed by your strained yoghurt.

  27. Sprinkle with chopped coriander to garnish.
