How to make it

Steps in our own plain words.

  1. Place the meat cut in bits, in a large pan with the onions.

  2. Add your turmeric and enough water to cover.

  3. Bring to the boil then cook till your meat is very tender plus can easily be removed from the bones.

  4. While your meat is cooking, cut the orange peel in thin match style bits, removing as much pith as possible.

  5. Leave to soak in bowl of water, 3.

  6. Wait until the meat is tender.

  7. Remove from your pan and when cool enough.

  8. Remove the meat from the bones.

  9. Shred the meat in strips with your hands.

  10. Return the meat to the pan, 4.

  11. Wash the short grain rice.

  12. Add to your pan with salt according to taste.

  13. The juices should cover the rice by around ¾ inch.

  14. Add more water if necessary.

  15. Bring back to the boil.

  16. Turn the heat down to medium.

  17. Heat using your lid off, stirring from time to time till your rice is "al dente" plus the liquid is absorbed, 5.

  18. Add the natural yoghurt.

  19. Stir in well but.

  20. Fry your crushed cloves of garlic in the oil.

  21. Add to the dish along with extra salt, the chickpeas, black pepper and the dill to taste, 6.

  23. Cover the top of your pan using a clean thick cloth and the lid.

  24. Leave on a low heat for around half an hour to let the flavours to absorb.
