Recipe makes 4

  • 8 oz butter
  • 12 oz all-purpose flour Shopping tip: All-purpose flour (UK: plain flour).
  • 3 ½ oz superfine sugar Shopping tip: Superfine sugar (UK: caster). Regular sugar works.
  • 10 oz mincemeat
  • 1 egg
  • Topping powdered sugar Shopping tip: Powdered sugar (UK: icing sugar).

How to make it

Steps in our own plain words.

  1. To make your pastry, rub 8 oz cold, diced butter in 12 oz plain flour.

  2. Mix in 3 ½ oz golden caster sugar plus a pinch of salt.

  3. Mix the pastry in a ball – don’t add liquid –.

  4. Knead it briefly.

  5. Your dough will be firm, like shortbread dough.

  6. Use the dough right away, or chill for later.

  7. Turn the oven on to 400°F (350°F for a fan oven).

  8. Line 18 holes of 12-hole patty tins, by pressing little walnut-sized balls of pastry in each hole.

  9. Spoon 10 oz mincemeat into the pies.

  10. Take a bit smaller balls of pastry than before plus pat them out between hands.

  11. Do it to make round lids, big enough.

  12. Cover the pies.

  13. Top your pies with their lids, pressing the edges together.

  14. Do it to seal – you don’t need.

  15. Do it to seal them using milk or egg as will stick on their own.

  16. (Your pies may be frozen for up to 1 month).

  17. Beat 1 little egg plus brush the tops of the pies.

  18. Bake for 20 mins until golden.

  19. Leave to cool in your tin for 5 mins.

  20. Remove to a wire rack.

  21. Lightly dust with icing sugar.
