  • ½ cup rutabaga Shopping tip: Rutabaga (UK: swede).
  • 2 eggs
Spices & seasonings (3): salt, salt, pepper
  • ¼ tsp salt
  • 1 tsp salt
  • ¼ tsp pepper

How to make it

Steps in our own plain words.

  1. Sift flour and salt in a large mixing bowl.

  2. Use a spoon to push your egg yolk through a fine sieve in the flour.

  3. Add the raw egg.

  4. Mix well.

  5. Beat in butter 1 tablespoon each time.

  6. Place dough on a floured surface.

  7. Knead until smooth and elastic.

  8. Wrap in waxed paper.

  9. Refrigerate until firm (at least 30 minutes).

  10. Melt 2 tablespoons butter over medium heat in a heavy pan.

  11. Cook the onion and rutabaga till the onion is tender and transparent (5 minutes).

  12. Put the onions grinder twice, rutabaga and beef through a meat if you have one, if not chop them up as fine as possible.

  13. Melt the rest of the 4 tablespoons butter over medium heat.

  14. Add the meat mixture.

  15. Cook over low heat, till all of your liquid has evaporated and the mix is thick enough to hold its shape.

  16. Stir every so often.

  17. Take it off the heat.

  18. Let cool.

  19. Stir in 1 egg.

  20. Season with salt and pepper.

  21. Turn the oven on to 350°F.

  22. Roll the dough out in a 13x8" rectangle (1 8" thick) on a lightly floured surface.

  23. Spoon your filling down your center of the rectangle lengthwise, leaving around an inch of space on each end.

  24. Lightly brush your long sides with cold water.

  25. Fold one of your long sides over your filling plus your other side over the top of that.

  26. Brush the short ends with cold water.

  27. Fold them over the top, enclosing your filling.

  28. Place pastry seam side down on a sheet pan and brush the top with the remaining scrambled egg.

  29. Bake in heat the oven until rich golden (30 minutes).

  30. Slice pastry diagonally in 1.5" long pieces.

  31. Serve as an appetizer or with soup.

On the side: Green salad
