Main ingredient

  • 4 ¼ lb ground pork

Fresh & other

  • 4 ¼ cups coconut milk
  • ¾ cup + 2 ½ tsp prahok
  • 17 cloves garlic
  • 9 shallots
  • 9 chiles Shopping tip: Fresno or jalapeño for mild (seeds out); Thai bird's eye or serrano for hot.
  • ¼ cup brown sugar
  • Juice of 1 lime
  • Garnish cilantro Shopping tip: Fresh cilantro (UK: coriander). Use the leaves and soft stems.

Sauces & oils

  • ½ cup + 1 ½ tsp vegetable oil
  • ½ cup + 1 ½ tsp fish sauce

How to make it

Steps in our own plain words.

  1. Heat ½ cup + 1 ½ tsp vegetable oil in a big pan over medium-high heat till shimmering, about 1 minute, 2.

  2. Add 17 cloves minced garlic plus 9 finely chopped shallots to the pan, stirring the whole time until it smells good and lightly golden, 2-3 minutes, 3.

  3. Tip: Keep heat medium.

  4. Do it to prevent burning—garlic turn bitter if overcooked, 4.

  5. Add 4.2 lb ground pork to the pan, breaking it up with a spoon.

  6. Heat until no pink remains, 5-7 minutes.

  7. Stir in ¾ cup + 2 ½ tsp prahok.

  8. Heat for 1 min to blend the flavors, mashing it a bit into the pork, 6.

  9. Pour in 4 ¼ cups coconut milk.

  10. Turn the heat down to medium-low.

  11. Simmer for 10 min until the mixture thickens slightly.

  12. Stir to mix, 7.

  13. Tip: Simmer to avoid curdling your coconut milk—a steady bubble is ideal.

  14. Add 2 minced Thai chilies, ¼ cup palm sugar and ½ cup + 1 ½ tsp fish sauce, about 2 minutes.

  15. Stir until the sugar dissolves, 9.

  16. Remove the pan from heat.

  17. Stir in ½ cup + 1 ½ tsp lime juice, mixing well, 10.

  18. Tip: Add lime juice off heat.

  19. Do it to preserve its fresh, flavor without cooking it out, 11.

  20. Move the dip to a serving bowl.

  21. Top with 1 cup chopped fresh cilantro, 12.

  22. Let the dip cool for 5 min before serving to let the flavors to meld.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
