How to make it

Steps in our own plain words.

  1. Boil: Bring water to a boil, add eggs.

  2. Cook for exactly 6½ to 7 minutes.

  3. Ice Bath: right away move your eggs to bowl of ice water for 3–5 min to stop cooking.

  4. Marinate: Peel your eggs and marinate in a mix of 4 tbsp water, 1 tsp sugar, 2 tbsp mirin and 2 tbsp soy sauce for at least 4 hours.

  5. Dish up: Slice in half, letting the yolk flow in the broth.

On the side: Cucumber salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Thinly slice the cucumbers.
  2. Toss with the rice vinegar and a pinch of salt. Let it sit a few minutes.
