Steps in our own plain words.

  1. Peel the onions.

  2. Cut them.

  3. Do it in half from top to bottom plus finely slice into half-moon pieces.

  4. Put in colander placed over a bowl.

  5. Sprinkle using salt, lightly turning over the onion bits using your hands so your surfaces are all covered.

  6. Put it to one side for an hour or so to brine.

  7. While that cooks, put the sugar, 3 ½ tbsp water and vinegar in a pot.

  8. Bring to a simmer.

  9. Cook for a couple of minutes.

  10. Stir to help the sugar dissolve.

  11. Set aside.

  12. Pack the onions in your sterilised jars, sprinkling in little pepper as you go.

  13. Cover using your warm vinegar plus finish by tucking 2 bay leaves down your side of the jars, seal.

  14. Your onions are best kept in your fridge and used within to 4 weeks.
