Main ingredient

  • 11 oz salt cod

Fresh & other

  • 1 onion
  • 11 oz jersey royal potatoes
  • 2 cloves garlic
  • 8 eggs

Sauces & oils

  • ¼ cup olive oil
Spices & seasonings (1): parsley
  • 2 ½ tbsp parsley Shopping tip: Fresh flat-leaf (Italian) parsley. Curly works too.

How to make it

Steps in our own plain words.

  1. Heat half your oil in a frying pan.

  2. Cook the onion over a medium heat till tender and pale gold – this will take around 8 mins.

  3. Remove from the pan.

  4. Set aside.

  5. Add the potatoes to the pan.

  6. Cook until they're tender but not falling apart, turning every so often.

  7. Cover your pan some of your time to help the slices cook through.

  8. Add your onions back to your pan along with the garlic.

  9. Cook for another 4 mins.

  10. Tip into a bowl with some seasoning, parsley and the eggs.

  11. Mix.

  12. Leave to sit for half an hour.

  13. While that cooks, put the cod in a pot.

  14. Cover with water.

  15. Bring up to a simmer.

  16. Take it off the heat, cover.

  17. Leave for 10 mins.

  18. Drain.

  19. Leave to cool.

  20. Remove the skin and any bones.

  21. Break into large flakes.

  22. Add to the potato and egg mixture.

  23. Heat the rest of your oil in a non-stick frying pan.

  24. Pour in the tortilla mix.

  25. Heat over a medium-low heat until it's set plus coming away from your sides of the pan.

  26. You might need.

  27. Cover it to help the centre set.

  28. Be careful not to overcook it.

  29. Put a spatula underneath your tortilla every so often.

  30. Do it to make sure it isn’t sticking.

  31. Slide the tortilla onto a plate.

  32. Put the pan on top.

  33. Flip the tortilla in it, uncooked side-down.

  34. Heat over a low heat till golden, or grill until set.

  35. Leave to cool a little before serving.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
