How to make it

Steps in our own plain words.

  1. Put your flour and salt in a bowl.

  2. Add the orange zest, lemon, sugar, currants and suet.

  3. Pour in ⅓ cup + 2 tbsp milk.

  4. Mix to firm but moist dough, adding your extra milk if necessary.

  5. Shape in a fat roll about 8 inches long.

  6. Place on a big rectangle of baking parchment.

  7. Wrap loosely to let for your pudding to rise plus tie your ends with string like a Christmas cracker.

  8. Place a steamer over a big pan of boiling water.

  9. Add your pudding to your steamer, cover plus steam for 1 1 2 hours.

  10. Top up your pan with water from time to time.

  11. Remove from the steamer and let it cool slightly before unwrapping.

  12. Serve sliced with custard.
