  • 1 ½ cups almonds
  • 2 eggs
  • 1 cup granulated sugar
  • 1 ½ tbsp flour
  • ¾ tsp baking powder
  • 4 egg yolks
  • ⅓ cup heavy cream
  • ¼ cup granulated sugar
  • 2 ⅔ oz butter
Spices & seasonings (1): vanilla extract
  • ¾ tsp vanilla extract

How to make it

Steps in our own plain words.

  1. Almond base.

  2. Turn the oven on to 345°F plus grease cake form – you can line the bottom using baking paper if you like.

  3. Grind almonds in almond grinder or food processor.

  4. Whisk the eggs and sugar together until mixed.

  5. Stir in baking powder, flour and the ground almonds.

  6. Pour batter into cake form.

  7. Bake for around 45 – 50 min, monitoring to make sure top doesn't burn.

  8. Yellow egg cream.

  9. Add vanilla, sugar, heavy cream and egg yolks to a pot.

  10. Heat over low/medium heat while stirring the whole time until the mixture thickens – about 15 minutes.

  11. Turn up the heat if the mix doesn't thicken, but careful not to boil.

  12. Let the mixture cool to room temperature.

  13. Add the butter.

  14. Use electric mixer for a fluffy egg cream.

  15. Assembly.

  16. Wait for the cake to cool fully before removing from form and frosting.
