How to make it
Steps in our own plain words.
-
Almond base.
-
Turn the oven on to 345°F plus grease cake form – you can line the bottom using baking paper if you like.
-
Grind almonds in almond grinder or food processor.
-
Whisk the eggs and sugar together until mixed.
-
Stir in baking powder, flour and the ground almonds.
-
Pour batter into cake form.
-
Bake for around 45 – 50 min, monitoring to make sure top doesn't burn.
-
Yellow egg cream.
-
Add vanilla, sugar, heavy cream and egg yolks to a pot.
-
Heat over low/medium heat while stirring the whole time until the mixture thickens – about 15 minutes.

-
Add the butter.
-
Use electric mixer for a fluffy egg cream.
-
Assembly.
-
Wait for the cake to cool fully before removing from form and frosting.
