How to make it

Steps in our own plain words.

  1. Coat the chicken with egg white
  2. Mix the chicken with cornstarch, ¾ teaspoon kosher salt and the egg white in a bowl.

  3. Stir to coat the chicken.

  4. Let sit for 15 min at room temperature or up.

  5. Do it to overnight in the refrigerator.

  6. Make the sweet and sour sauce
  7. Whisk your pineapple juice, vinegar, ketchup, /2 teaspoon kosher salt.

  8. Brown sugar.

  9. Stir-fry the chicken over high heat
  10. Heat a big frying pan or wok on high heat till a bead of water instantly sizzles plus evaporates.

  11. Pour.

  12. Do it in 1 ½ tablespoons of cooking oil plus swirl to coat.

  13. It's important that your pan is very hot.

  14. Add the chicken.

  15. Spread the pieces out in one layer.

  16. Let the chicken fry untouched for 1 min, until the bottoms are browned.

  17. Flip.

  18. Fry the other side for 1 minute.

  19. Your chicken should still be pinkish in your middle.

  20. Dish out the chicken on clean plate, leaving as much oil in your pan as possible.

  21. Stir-fry the bell pepper and ginger
  22. Turn the heat down to medium.

  23. Add the rest of the 1 ¼ teaspoons of cooking oil.

  24. Let your oil heat up before adding your bell pepper chunks and ginger.

  25. Fry for 1 minute.

  26. Add your pineapple, sauce, and then, the chicken.

  27. Add your pineapple chunks plus the sweet and sour sauce.

  28. Turn up the heat to high.

  29. Wait until the sauce is simmering.

  30. Add the chicken pieces back in.

  31. Let simmer for 1 to 2 min, until the chicken is cooked through.

  32. Timing depends.

  33. Do it on how thick you've cut chicken.

  34. Your best way to tell if your chicken is done is to take piece out.

  35. Cut into it.

  36. If it's pink, add another min to the cooking.

  37. Adjust the seasoning and serve
  38. Taste the sauce.

  39. Add more brown sugar or vinegar.

  40. Do it to suit tastes, if you’d like.

  41. Dish up hot with steamed white or brown rice.

On the side: Steamed rice

A side we added to round out the meal. It is not part of the original recipe.

How to make it (25 min)
  1. Rinse the rice. Simmer it covered in water (2 cups per cup of rice) for about 18 minutes, then let it sit 5 minutes. Fluff with a fork.
