How to make it
Steps in our own plain words.
-
Slice the unpeeled onion in half widthways.
-
Fry off the cut surfaces without fat till fairly well browned.
-
Put around 13 cups of water in a large pot.
-
Add the peppercorns, bay leaves, halves of onion, leek and root vegetables.
-
Bring to a boil.
-
Add your washed meat plus bones plus, depending on the type of meat, let it cook until softened in simmering water, which will around 2 1⁄2 – 3 hours.
-
Add more water as required plus skim off any foam from the surface.
-
Season fully using salt, but only after good 2 hours.
-
Wait until the meat has softened.
-
Remove it from the pan.
-
Keep it warm in some of your liquid from the soup.
-
Season your remainder of your soup again with salt as you like, and strain it.
-
Serve with semolina dumplings or "Frittaten" and freshly chopped chives as a starter.
-
Afterwards.
-
Slice your boiled beef by cutting on your bias plus arrange it on pre-heated plates, or dish up in your hot soup in a decorative soup tureen.
-
Serve with roast horseradish mix, a bread and potatoes, green beans in dill sauce, or creamed spinach plus chive sauce.
-
If your root vegetables are to be served at your same time, heat of them to be served al dente.

A side we added to round out the meal. It is not part of the original recipe.
