Main ingredient

  • 7 oz beef Shopping tip: Usually flank or sirloin steak, sliced thin. Ground beef works too.

Fresh & other

  • 1 red chile Shopping tip: Fresno or red jalapeño for mild (seeds out); Thai bird's eye for hot.
  • Handful basil leaf Shopping tip: Fresh leaves, not dried. Thai basil is best; regular basil works.

Sauces & oils

  • 1 tbsp vegetable oil
  • 1 tbsp oyster sauce

How to make it

Steps in our own plain words.

  1. Heat a wok or big frying pan until smoking hot.

  2. Pour in your oil and swirl around the pan.

  3. Tip in the beef strips and chilli.

  4. Cook, till the meat is lightly brown, about 3 mins.

  5. Pour over the oyster sauce.

  6. Stir all the time.

  7. Cook until hot all the way through and the sauce coats the meat.

  8. Stir in the basil leaves.

  9. Serve with plain rice.

On the side: Steamed rice

A side we added to round out the meal. It is not part of the original recipe.

How to make it (25 min)
  1. Rinse the rice. Simmer it covered in water (2 cups per cup of rice) for about 18 minutes, then let it sit 5 minutes. Fluff with a fork.
