How to make it

Steps in our own plain words.

  1. Pour 5 ½ cups water in a large pot over a high heat.

  2. Add the chicken stock cube, prawn heads, lemongrass, galangal, chilli, tomato and onion.

  3. Stir.

  4. Bring to a boil.

  5. Turn the heat down to medium.

  15. Heat till the prawns are cooked through, around 1-2 mins.

  16. Take it off the heat.

  17. Remove the lemongrass.

  18. Mix in the Thai chilli jam, if using.

  19. Scatter over your coriander to finish, if you like.

  20. Serve.

On the side: Steamed rice

A side we added to round out the meal. It is not part of the original recipe.

How to make it (25 min)
  1. Rinse the rice. Simmer it covered in water (2 cups per cup of rice) for about 18 minutes, then let it sit 5 minutes. Fluff with a fork.
