How to make it

Steps in our own plain words.

  1. Add hind shank, 1 halved little onion, halved bell pepper, whole garlic cloves, your dark green leaves of your leek, and stock to a large big pot.

  2. Heat for 45-60 min until the meat is fork-tender.

  3. NOTE: your meat can take bit longer to be fork-tender.

  4. That is okay, add more cooking time if necessary.

  5. Wait until the meat is tender.

  6. Remove the big bits of vegetables and bones, discard.

  7. Add corn, yucca, scallions, sliced leeks, mini sweet peppers, 2 minced garlic and diced onion.

  8. Mix.

  9. Simmer covered on medium heat for 5- 8 min, until the yucca is starting to soften.

  10. NOTE: your yuca can take bit longer to start softening.

  11. That is okay, add more cooking time if necessary.

  12. Add yautia, white yam, and butternut squash.

  13. Mix to mix.

  14. Simmer covered on medium heat for 5 – 6 min, until all the root vegetables are tender.

  15. NOTE: don't heat too much, or they will fall apart.

  16. Taste.

  17. Add salt to your taste, if necessary.

  18. Add cilantro and the rest of the 2 minced garlic cloves.

  19. Mix.

  20. Let simmer for 2 more minutes.

  21. Serve hot in vegetables, dividing the meat and large soup bowls.

  22. Add a squish of lime juice plus/or hot sauce, if wanted.

  23. Serve along with arepas and or casabe.

On the side: Green salad
