Ingredients

How many people?

− 4 people +

Recipe makes 4

  • ⅓ oz yeast
  • ¾ cup + 1 tbsp milk
  • 1 oz sugar
  • 14 oz flour
  • 1 egg
  • 2 ⅔ oz unsalted butter
  • 2 ⅔ oz brown sugar
  • 9 oz brown sugar
Spices & seasonings (3): salt, cinnamon, cardamom
  • 1 tsp salt
  • 1 tbsp cinnamon
  • 1 tbsp cardamom

How to make it

Steps in our own plain words.

  1. Place the sugar, milk and dried yeast in the bowl of your food processor.

  2. Mix.

  3. Let stand for some minutes until it begins to foam.

  4. Add the cardamom, 1 tsp of cinnamon, salt, butter, egg and flour and process until smooth.

  5. Form the dough into a ball.

  6. Cover the bowl.

  7. Let it rise for 1 hour until it has doubled in size.

  8. Mix your caster sugar with 1 tablespoon of cinnamon.

  9. Pour over the dough.

  10. Roll it in.

  11. Form 10 equal balls (around 2 ⅔ oz each).

  12. Let them “sweat” for a while.

  13. The sugar will dissolve a little.

  14. Wait until you roll them again later.

  15. The rest of your dough will absorb the sugar better.

  16. Roll the ball in a strand around 35-16 inches long while rolling through your powdered sugar.

  17. Fold your strand around one end plus tuck the other end under the bolus.

  18. Push something between your roll to secure the end.

  19. Place on a sheet pan lined with a sheet pan.

  20. Cover with plastic wrap.

  21. Let them rise for ½-1 hour.

  22. While that cooks, turn the oven on to 475°F Fahrenheit top and bottom heat.

  23. Bake the Zeeland Boluses for around 8 minutes until done.

  24. Be careful – if you bake you will want something, they will get dry and them too long sticky 😉.

  25. Let them cool out of oven for 1 minute.

  26. Turn them over.

  27. Let them cool further.
