Main ingredient

  • 4 lb ground lamb Shopping tip: Ground lamb (UK: lamb mince).

Fresh & other

  • 5 romano pepper
  • ⅓ cup + 1 tbsp red bell pepper paste
  • 2 ½ tbsp pul biber

Sauces & oils

  • ⅓ cup + 1 tbsp sunflower oil

How to make it

Steps in our own plain words.

  1. Finely chop your peppers in a food processor.

  2. Tip them in a sieve and press in your sieve so that your peppers release all of their juices.

  3. Tip in a bowl along using your mince, red pepper paste, biber, 1½ tsp flaky sea salt, plus ¼ cup + 1 ½ tsp of the oil.

  4. Mix, kneading fully for at least 2-3 mins.

  5. If you need to, wet your hands using cold water to prevent the mix from sticking.

  6. The mixture should be sticky when ready.

  7. Cover.

  8. Chill.

  9. Keep going for at least 2, or up to 12 hrs.

  10. Wait until ready to cook.

  11. Heat your grill to high or oven to 425°F (400°F for a fan oven).

  12. Divide the mix into 12 equal portions, around 3 oz each.

  13. If you’d like.

  14. Do it to skewer them, divide in 8 equal portions.

  15. Roll into balls.

  16. Thread the balls on the end of the skewers, massaging the mix down your skewers in between your palms of your hands, until distributed using wet hands.

  17. Ensure that the mix is fully wrapped tightly around your skewers without any exposed metal.

  18. Alternatively, lay them on a big baking tray lined using parchment paper if cooking in oven, or foil if cooking under your grill.

  19. Shape into 8 inches-long köfte.

  20. Wet your fingers using a little cold water plus make indents all along your köfte for the traditional shape.

  21. Brush every köfte with the rest of the 2 ½ tbsp oil.

  22. Heat under your grill, on top shelf for 10-12 mins, or heat in the oven for 16-18 mins, till crispy on your outside and juicy in the middle.

  23. Turn regularly.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
