How to make it

Steps in our own plain words.

  1. Place a steamer insert into a pot, plus fill using 2 cups of water, or below the bottom of the steamer.

  2. Cover.

  3. Bring your water to a boil over high heat.

  4. Add the sliced carrots.

  5. Turn the heat down to medium.

  6. Cover the pan again.

  7. Steam until soft but not mushy, 4 to 6 min depending on the thickness of the slices.

  8. Reserve 1 2 cup of your cooking liquid.

  9. Heat the olive oil in a pan over medium heat.

  10. Turn the heat down to low.

  11. Stir in thyme, garlic, cumin, cinnamon, pepper and the salt.

  12. Cook the spices and garlic, until it smells good, about 10 minutes.

  14. Add your 1 2 cup reserved cooking liquid plus the bay leaf.

  15. Cover.

  16. Simmer for 20 minutes.

  17. Mix in the carrots, tossing fully to coat with the spice mixture.
