How to make it

Steps in our own plain words.

  1. Turn the oven on to 450°.

  2. Bring a big pot of water to a boil.

  3. Trim ends of yuca.

  4. Cut each one in half, widthwise.

  5. Stand them on their ends plus use a sharp knife to cut your waxy peel off.

  6. Cut each piece in half lengthwise.

  7. Cut.

  8. Do it in half lengthwise one more time.

  9. Do it to create 16 pieces total.

  10. Trim the fibrous center out of every piece.

  11. Place cut yuca into boiling water.

  12. Let boil until soft, 8 to 10 minutes.

  13. Remove from pot using a slotted spoon.

  14. Place on paper towel lined cutting board.

  15. Pat dry with another paper towel.

  16. Place dried yuca into a large bowl.

  17. Toss with oil.

  18. Season with chili powder, salt, and pepper.

  19. Toss again to coat.

  20. Place yuca on a large sheet pan in an even layer.

  21. Cook in the oven until golden and crispy, about 25 minutes.

  22. Toss halfway through.

  23. While that cooks, make dipping sauce: In a little food processor or blender, mix avocado, sour cream, lime juice, and cilantro.

  24. Blend until smooth.

  25. Season with salt and pepper.

  26. Serve fries right away with dipping sauce.
