Bring a big pot of water to a boil.
-
Trim ends of yuca.
-
Cut each one in half, widthwise.
-
Stand them on their ends plus use a sharp knife to cut your waxy peel off.
-
Cut each piece in half lengthwise.
-
Cut.
-
Do it in half lengthwise one more time.
-
Do it to create 16 pieces total.
-
Trim the fibrous center out of every piece.
-
Place cut yuca into boiling water.
-
Let boil until soft, 8 to 10 minutes.

Remove from pot using a slotted spoon.
-
Place on paper towel lined cutting board.
-
Pat dry with another paper towel.
-
Place dried yuca into a large bowl.
