  3. 2) Shape into meatballs.

  4. Traditionally, Liège restaurants dish up **one or two very big meatballs**, depending on appetite, 3).

  5. Keep going for weeknight cooking, I mine smaller so they brown faster.

  6. Cook through quickly.

  7. Brown the meatballs.

  8. 4) Heat butter or oil in a big pan.

  9. 5) Brown the meatballs on every side until they have a nice crust.

  10. 6) Remove them from the pan.

  11. Set aside.

  12. Start the sauce.

  13. 7) In same pan, melt 3 ½ tbsp butter.

  14. 8) Add the sliced onions.

  15. Cook until soft and lightly caramelised.

  16. 9) Sprinkle in the brown sugar.

  17. Let it melt into the onions, deglaze.

  18. Add the stock.

  19. 10) Add your vinegar and scrape up all the brown bits from the pan.

  20. 11) Mix in the mustard and Liège syrup.

  21. 12) Pour in the beef stock.

  22. 13) Add the bay leaf.

  23. 14) Mix till your syrup dissolves and the sauce looks glossy.

  24. Simmer and adjust.

  25. 15) Return the meatballs to the pan.

  26. 16) Cover.

  27. Simmer for 25–30 minutes.

  28. Stir every so often.

  29. Let the sauce thicken naturally.

  30. 17) Taste plus adjust: more syrup.

  31. Keep going for sweetness, more vinegar.

  32. Keep going for tang, more mustard for depth.

  33. The sauce should be sweet‑velvety, rich and sour.

  34. 18) Serve with fries or mashed potatoes.
