How to make it
Steps in our own plain words.
-
Soak 4 oz black beans overnight (8 to 12 hours) in plenty of cold water. Drain.
-
Heat a large heavy pot with a lid over medium heat. Fry 1 ¾ oz bacon (chopped) for 5 to 6 minutes, until crisp. Lift it out and keep the fat in the pot. Turn the heat to medium-high. Season 9 oz pork back rib (cut into single ribs), 2 chorizo (cut in chunks) and 9 oz pork shoulder (cut into 2-inch pieces) with salt and pepper. in batches for 3 to 4 minutes per side, until browned. Set aside.
Sear: Sear means cook the outside of food fast in a very hot pan so it gets brown.
What it looks like: A dark brown crust forms. The food lets go of the pan easily when it's ready to turn.
-
Turn the heat to medium. Add 2 onions, 2 cloves garlic and chile flake, plus a drizzle of oil if the pot is dry. Cook for 5 to 7 minutes, until soft.
-
Put all the meat back in with the beans, 1 bay leaf and water to cover by 1 inch. , then cover and over low heat for 2 ½ to 3 hours, stirring now and then, until the beans are soft and the pork is falling apart. Add water if it gets dry.
Bring to a boil: Boil means heat a liquid until it bubbles hard.
What it looks like: Lots of big bubbles break the top all the time, with steam.
Simmer: Simmer means cook a liquid just below boiling, on low to medium-low heat.
What it looks like: Small bubbles rise and pop slowly, now and then. Not big, fast bubbles.
-
Take out the bay leaves. Taste for salt and pepper. Serve with rice, orange slices and greens.
On the side: Crusty bread
A side we added to round out the meal. It is not part of the original recipe.
How to make it (5 min)
- Slice the bread. Warm it in the oven for 5 minutes if you like.
