Fresh & other

  • 12 oz all-purpose flour Shopping tip: All-purpose flour (UK: plain flour).
  • ⅔ cup + 2 tsp water
  • 1.5 lb potatoes
  • 1 ⅓ oz green onions Shopping tip: Green onions (scallions).

Sauces & oils

  • For frying vegetable oil
Spices & seasonings (2): salt, black pepper
  • 2 ¼ tsp salt
  • ¾ tsp black pepper

How to make it

Steps in our own plain words.

  1. Put your flour plus teaspoon of salt in a mixing bowl.

  2. Adding as much water as is required.

  3. Mix to form a stiff dough.

  4. Place your dough on a clean work surface.

  5. Knead for about 5-10 minutes until shiny, smooth and the dough is elastic.

  6. Form the dough into a ball.

  7. Cover with a damp cloth.

  8. Put it to one side for at least half an hour.

  9. Peel and wash the potatoes.

  10. Boil them in salted water until soft.

  11. Drain off the water.

  12. Mash well.

  13. Add the black pepper, salt and spring onions.

  14. Divide the dough in 3 or 4 balls.

  15. Roll out every ball as possible on a lightly floured surface (your thickness should be no than 1.5mm - if your dough is too thick your Bolani will be tough).

  16. Take a round cutter of 13-6 inches.

  17. Cut as many rounds as possible.

  18. On every round spread 1-2 tablespoons of your mashed potato.

  19. Moisten the edges of the dough.

  20. Fold over and seal shut.

  21. Your Bolani should be spread out on lightly floured surface until ready to fry.

  22. Heat enough vegetable oil in frying-pan plus shallow fry one or two Bolani at time, browning on both sides.

  23. Make sure to keep your fried Bolani warm until all are finished.

  24. Serve straight away.
