  • 5 cabbage leaves
  • 1 onion
  • 1 celery
  • 3 ⅔ oz cooked chestnuts
  • 1 ⅓ oz cranberries
  • ¾ cup + 3 tbsp vegetable stock Shopping tip: Vegetable broth (carton or can), or a bouillon cube in hot water.
  • ¾ tsp clear honey Shopping tip: Regular runny honey.

Sauces & oils

  • 1 ½ tbsp olive oil
  • 2 ¼ tsp balsamic vinegar
Spices & seasonings (1): rosemary
  • 1 ½ tsp rosemary Shopping tip: Dried rosemary is fine here.

How to make it

Steps in our own plain words.

  1. Turn the oven on to 350°F (325°F for a fan oven).

  2. Remove your tough central stalk from the cabbage leaves.

  3. Bring a big pan of salted water to the boil.

  4. Add the cabbage.

  5. Cook for 1-2 mins till the leaves are starting to wilt.

  6. Drain and refresh under cold running water.

  7. Drain well.

  8. Pat dry with a tea towel.

  9. Heat the oil in a pan.

  10. Add the onion.

  11. Fry for 5 mins until slightly browned.

  12. Add the rosemary and celery.

  13. Cook for 8 mins more.

  14. Stir in the rice.

  15. Heat for a min or so till the grains are glistening.

  16. Take it off the heat.

  17. Stir in the chestnuts and cranberries.

  18. Season.

  19. Spoon a little stuffing on a cabbage leaf.

  20. Roll up.

  21. Fold in your sides to enclose the filling.

  22. Put in a single layer in a big, oiled, shallow ovenproof dish using the join underneath.

  23. Fill the rest of the leaves in the same way.

  24. Mix the stock, vinegar and honey.

  25. Pour over the cabbage.

  26. Cover the dish tightly with foil.

  27. Bake for 1 hr, uncover.

  28. Cook for a further 15 mins.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
