Recipe makes 4

Main ingredient

  • 4 white fish Shopping tip: Cod, haddock, tilapia or pollock fillets. Frozen works.

Fresh & other

  • 2 tbsp cajun
  • 8 flour tortillas
  • 1 avocado
  • 2 little gem lettuce
  • 4 green onions Shopping tip: Green onions (scallions).
  • 1 sour cream
  • 1 lemon
  • 1 clove garlic

Sauces & oils

  • 1 tsp vegetable oil
  • 1 salsa
Spices & seasonings (1): cayenne pepper
  • 1 tsp cayenne pepper

How to make it

Steps in our own plain words.

  1. Cooking in a cajun spice plus cayenne pepper marinade makes fish super succulent and flavoursome.

  2. Top with a zesty dressing.

  3. Dish up in tortilla for quick, fuss-free main that's summery.

  4. Mix your cajun spice plus cayenne pepper using a little seasoning plus use to coat the fish all over on a large plate.

  5. Heat little oil in a frying pan.

  6. Add in the fish.

  7. Cook over a medium heat until golden.

  8. Turn the heat down and continue frying till the fish is cooked through, around 10 minutes.

  9. Heat in batches if you ’t have enough room in the pan.

  10. While that cooks, prepare your dressing by combining all your ingredients with a little seasoning.

  11. Soften your tortillas by heating in your microwave for 5-10 seconds.

  12. Pile high with spring onion, lettuce and the avocado.

  13. Add a spoonful of salsa.

  14. Top with big flakes of fish plus drizzle over the dressing.

On the side: Rice and beans

A side we added to round out the meal. It is not part of the original recipe.

How to make it (25 min)
  1. Rinse the rice. Simmer it covered in 2 cups of water for about 18 minutes.
  2. Warm the refried beans in a small pot, stirring, until hot.
