- 1 sour cream
- 1 lemon
- 1 clove garlic
Sauces & oils
- 1 ¼ tsp vegetable oil
- 1 salsa
Spices & seasonings (1): cayenne pepper
- 1 ¼ tsp cayenne pepper
How to make it
Steps in our own plain words.
-
Cooking in a cajun spice plus cayenne pepper marinade makes fish super succulent and flavoursome.
-
Top with a zesty dressing.
-
Dish up in tortilla for quick, fuss-free main that's summery.
-
Mix your cajun spice plus cayenne pepper using a little seasoning plus use to coat the fish all over on a large plate.
-
Heat little oil in a frying pan.
-
Add in the fish.
-
Cook over a medium heat until golden.
-
Turn the heat down and continue frying till the fish is cooked through, around 10 minutes.
-
Heat in batches if you ’t have enough room in the pan.
-
While that cooks, prepare your dressing by combining all your ingredients with a little seasoning.
-
Soften your tortillas by heating in your microwave for 5-10 seconds.
-
Pile high with spring onion, lettuce and the avocado.
-
Add a spoonful of salsa.
-
Top with big flakes of fish plus drizzle over the dressing.
On the side: Rice and beans
A side we added to round out the meal. It is not part of the original recipe.
How to make it (25 min)
- Rinse the rice. Simmer it covered in 2 cups of water for about 18 minutes.
- Warm the refried beans in a small pot, stirring, until hot.
