  • 2 oz butter
  • 1 egg
  • 4 ¼ cups beef stock Shopping tip: Beef broth (carton or can), or a beef bouillon cube in hot water.

Spices & seasonings (2): salt, nutmeg
  • Pinch salt
  • Pinch nutmeg

How to make it

Steps in our own plain words.

  1. Let butter.

  2. Do it to come.

  3. Do it to room temperature before beating in bowl until creamed.

  4. Season with salt and a little, delicate pinch of nutmeg.

  5. Add in the egg.

  6. Stir vigorously.

  7. Sprinkle the semolina over this.

  8. Mix it in fully until the surface is smooth.

  9. Cover with saran wrap.

  10. Leave to rest for 15 – 20 minutes.

  11. Use two spoons, dipped regularly in hot water throughout.

  12. Do it to press or shape dumplings from your paste.

  13. Too place these on lightly oiled board or plate plus leave them to stand for short while.

  14. Heat generous quantity of salted water in a big pan.

  15. Place the dumplings into the water.

  16. Bring them back to boil before turning down the heat plus leaving to simmer for 10 – 15 minutes.

  17. Turn the dumplings every so often.

  18. Remove the semolina dumplings.

  19. Put them in the heated soup.

  20. Dish up promptly, using a garnish of sprinkled parsley or chives.

  21. The semolina dumplings can too be cooked in your beef broth, but this causes your soup to take on a a bit dull appearance.

  22. Your cooked dumplings should never left standing in your soup.

  23. Keep going for too long, as will “soak up” your soup and become softened.

On the side: Crusty bread

A side we added to round out the meal. It is not part of the original recipe.

How to make it (5 min)
  1. Slice the bread. Warm it in the oven for 5 minutes if you like.
