Main ingredient
- 3 ¾ cups corned beef
Fresh & other
- 4 tbsp unsalted butter
- 1 onion
- 4 potatoes
- Chopped freshly chopped parsley Shopping tip: Fresh flat-leaf (Italian) parsley. Curly works too.
Spices & seasonings (2): kosher salt, black pepper
- Dash kosher salt
- Dash black pepper
How to make it
Steps in our own plain words.
- Sauté the onions
-
Heat butter in a large pan on medium heat.
-
Add the onion.
-
Cook a few minutes, until see-through.
- Add the potatoes and corned beef
-
Mix in your chopped corned beef and potatoes.
-
Spread out over the pan.
-
Turn the heat up to high or medium high plus press down on the mix with a metal spatula.
- Cook until browned and then flip
-
Don't mix your potatoes plus corned beef, but let them brown.
-
If you hear them, this is good.
-
Use metal spatula to peek underneath plus see if they are browning.
-
If nicely brown, use your spatula to flip sections over in your pan so that they brown on your other side.
-
Press down again with the spatula.
-
If there is too sticking, you can add little more butter to the pan.
-
Continue to heat in this manner till your potatoes and the corned beef are nicely brown.
- Stir in the parsley and season
-
Take it off the heat.
-
Stir in chopped parsley.
-
Add plenty of freshly ground black pepper.
-
Add salt to taste.
On the side: Green salad
A side we added to round out the meal. It is not part of the original recipe.
How to make it (10 min)
- Rinse the salad greens. Slice the cucumber.
- Put it all in a bowl and toss with the dressing just before eating.
