How to make it

Steps in our own plain words.

  1. Put the bay leaves, potatoes, carrots, celery, onions and oil in a big baking dish, or two saucepans.

  2. Fry till the onions are softened – around 10-15 mins.

  3. Fill the kettle.

  4. Boil it.

  5. Stir in the tomato purée, passata, chopped tomatoes, vinegar and sugar.

  6. Crumble in the stock cubes.

  7. Add 4 ¼ cups boiling water.

  8. Bring to a simmer.

  9. Cover.

  10. Simmer for 15 mins till the potato is tender.

  11. Remove the bay leaves.

  12. Purée with a stick blender until very smooth.

  13. Season to taste.

  14. Add pinch more sugar if it needs it.

  15. Your soup can now be cooled plus chilled.

  16. Keep going for up.

  17. Do it to 2 days, or frozen.

  18. Keep going for up to 3 months.

  19. Reheat your soup, stirring in your milk – try not to let it boil.

  20. Dish up in small bowls with cheesy sausage rolls.
